This Holi try Malpua with orange sauce recipe from Sandhya’s kitchen
The festival of colours is knocking at our doors and we should all get preppin’ to dance, party and have a whale of a time! Since Holi is also synonymous with delicious food, we are here with a personal favourite recipe by chef Sandhya — Instant Malpua with Orange Sauce. So get ready to amaze your family with these incredible and flavoursome Indian-style soft pancakes to get them hooked!
Instant Malpua with Orange Sauce
Let’s start off first with collecting the ingredients for the recipe. To make instant Malpua with a delicious orange sauce you’ll need 4 tbsps of khoya (crushed), 8 tbsps of refined flour, 1/2 tbsp of elaichi (cardamom) powder, 2 tbsps of raisins, desi-ghee to deep fry, 200g of sugar, 200 ml of water, 4 to 5 drops of orange essence, 2 drops of orange colour and enough milk to make a flowing coating batter.
Coming to the process bit, let’s begin with making a smooth batter of khoya, milk, elaichi, raisins and flour. Once prepared, let is sit for at least 10 minutes to set. In the mean while, prepare your chashni by heating sugar and water in a pot for 20 minutes till it is glassy and thick enough. Once it’s ready add your orange essence and colour and keep it aside.
Now that we have both are elements ready to go, heat desi-ghee till it’s medium hot in a shallow pan. Roll your batter into small flat pancakes and fry till them till the edges are golden brown. Now dip these soft warm pancakes in your previously prepared chashni for about 2 minutes.
Ready to serve, garnish these babies with crushed nuts and some extra chashni on the side. Easy peasy lemon squeezy, right? Pair it with your morning tea or serve as a dessert with rabdi to the guests and make your celebrations all the more joyous!
